Luis Joaquin’s start to coffee came when he was just 13 years old, lending his father a hand on the family farm; Bella Aurora - located in Dipilito, Nueva Segovia this farm is blessed with high altitudes and rich fertile soils. Luis considers each year to be a learning journey and his coffee reflects this. He processed it independently using extended fermentation times that enhance the coffee's complexity, then handed the coffee over to Beneficio La Estrella, Caravela's drying facility in the region, for further drying using shaded raised beds. You can expect kaffir lime, buttered lemon with hazelnut and pecan pie in the aftertaste.

When Luis Joaquin was 13 years old, his father started growing coffee at Bella Aurora and this was the start of his connection to the world of coffee. The farm is fortunate enough to experience beautiful dawns surround by breath-taking landscapes. This is why Bella Aurora was chosen as the name of the farm. Aurora
also happens to be the name of Luis’s mother.
In 1958 the farm had terrible access. The only way of accessing it was by walking or riding a horse. The farm passed through difficult times during the war, and Luis’ father had to leave Nicaragua. He came back in 1991, to re-establish the farm and this was when he started to grow coffee. Even though he was still quite young, Luis loved to help his father with the production of the coffee, and it proved to be a fantastic learning expertise for him. Since then, Luis considers that each year in this journey is completely different. Each year is full of challenges and adventures.
Harvest: January - March
Processing Method: Fully washed and fermented for 14-20 hours.
Drying Method: Dried on shaded raised beds at Beneficio La Estrella.
Shade: Guaba, Musaceas, and Citric Fruit Trees.
