From the high mountains of Tolima comes El Indio, Natural, a stunning Caturra produced by our long-term partners in Planadas. This region is home to around 175 farming families, who, since 2019, have been supported with technical training in natural processing. Today, more than 80% of their harvests are prepared this way, bringing our dazzling clarity and complexity in the cup. Tolima's fresh climate and volcanic soils make it one of Colombia's most celebrated coffee-growing regions, consistently represented in the prestigious Cup of Excellence. The Caturra variety itself, a natural mutation of Red Bourbon first discovered in Brazil, is prized for its balance of yield, resilience, and quality. Carefully handpicked cherries are dried on raised beds for patios under the sun, with our quality control teams monitoring the process four times daily to ensure even drying and optimal moisture. This meticulous approach yields a cup alive with limoncello brightness, layered with caramelised pineapple sweetness and a delicate rose-like florality.
