  • 30g water at 80°

Method:

  1. Fill a tall glass with ice cubes
  2. Pour 30ml of passionfruit over the top of the ice. You can make your own from fresh passionfruit or use a good quality premade syrup. We used one without seeds.
  3. Top with tonic water (we used a classic), allowing aobut 1cm of space from the top of your glass.
  4. Whisk 2g of pure matcha with hot water until creamy and light.
  5. Layer your matcha on top of your drink, add a straw and enjoy.

Hot tip: If you don't have a temperature controlled kettle, boil your kettle and then allow to cool for 5 mins with the lid off. This should ensure your water cools to a more desireable temperature, creating less bitter notes in your matcha and enhancing its natural sweetness.
