Ramon García is a first-generation coffee producer living in Concepcion Huista, Huehuetenango. During the harvest, only the ripest cherries are picked resulting in a total of three picking passes during harvest. Cherries are de-pulped the same day of the picking and fermented in water for 36 hours. After the fermentation, the beans are further soaked for 12 hours, washed and dried on a patio for six days. Expect flavours of mandarin sweetness, peach juice with a dark fruit aftertaste of red berries and plum.
