Careful fermentation plays a central role in Leonid Ramirez’s approach to processing, helping build complexity while preserving the clarity Colombia’s washed coffees are known for. For this lot, ripe cherries undergo a controlled anaerobic fermentation before being pulped and finished with a classic washed drying approach. The result is a vibrant expression of Leonid’s coffee from the mountains of Génova, Quindío. Now in our eighth year sourcing his coffees, it’s been rewarding to watch both the farm and Leonid’s processing techniques continue to evolve. In the cup, expect a lively and expressive profile with flavours of rockmelon, blood orange and cola.
