What is a pre-service reset?
Every barista's opening ritual. Dialling in the grinder, seasoning the machine, tasting espresso, stocking cups, wiping benches, setting the station so everything flows. Sometime between the morning peak and the lunchtime rush, most stations slowly drift into chaos and suddenly you're underprepared. Clear and wipe your benches, backflush the group heads, restock cups, chocolate, matcha, sugars and takeaway essentials, refill milk. Batch brew running low? Brew another round. Remove clutter before customers notice it. This isn't just about cleanliness. It's about creating workflow. A clean station means cleaner movement, fast service and less mistakes. From a customer watching a barista work from a calm and organised space, it signals confidence and care in the craft.
Step 3: Reconnect and relaunch
Before service ramps up again, take a final moment to regroup. Organise dockets, confirm any outstanding orders and check in with your team.
