I'm sure we can agree the internet is filled with trends and asthetically pleasing content designed to seduce us into trying the next big thing. From the rise of dalgona coffee to iced drinks with foam and Biscoff lattes—our feeds have been hijacked! 

But before we dismiss these Insta-worthy drinks as fleeting fads, it's worth considering for cafés the value that they can bring to your menu. Not only can they reel in a fresh crowd, but they also crank up your café’s social media presence and even get your staff pumped.

Take the Strawberry Iced Matcha, for example. Thanks to Starbucks, this viral sensation has been adapted in many ways. With strawberry season in full swing here in Australia, now's the perfect time to get in on this drink. The fresh strawberries balance the matcha's earthy and umami notes, and it's versatile across most milks, making it an all-round refreshing drink. Check out our simple recipe and whip one up for yourself! 

Ingredients:  

  • 250g strawberries chopped
  • 20g lemon juice
  • 20g sugar/honey/maple
  • 30g water
  • Dash of salt

Method:  

  • Combine over gentle heat, allowing to cook down until the strawberries are soft 
  • Take off heat and mash. For a smoother texture, use a mixer/blender 
  • Whisk 3g of matcha to 30g of 70 degree water. Whisk until light and frothy. See in depth matcha brew guide here.
  • Place around 50g strawberry mixture into your glass 
  • Add your desired level of ice
  • Fill close to the top with milk of choice
  • Pour matcha over the top
  • Enjoy the benefits to your health and tastebuds! 

You can adjust the fruit layer depending on season—mango and blueberry also work a treat.
