Traditionally the Pumpkin Spice Latte (or PSL) is known as the beverage of Autumn for our friends across the pond. We certainly don't need to miss out though and I feel it's a perfect beverage for Spring that can be iced in one easy step! 

This recipe is easy to make, fun and super tasty. Like all recipes though, feel free to make changes as you see fit. 

Ingredients:  

  • Double shot of espresso (I'm loving our Crompton Road blend for this recipe)
  • Milk 
  • PSL Spice Mix (4 tbsp ground cinnamon, 4 tsp ground ginger, 2 tsp ground cloves, 1.5 tsp finely grated or ground nutmeg)
  • PSL Syrup (1 cup sugar - I like demerara, 1 cup filtered water, 400g pumpkin puree, PSL Spice Mix, 1/2 tsp vanilla extract) 
  • Whipped cream 

Method:  

PSL Syrup Mix

  • Place 1 cup sugar and 1 cup filtered water in saucepan and bring to simmer
  • Once dissolved, add pumpkin puree and half of your spice mix
  • Gently stir to prevent burning and simmer for approximately 20 mins until half volume remains
  • Remove from heat and strain through a cheesecloth
  • Stir in vanilla extract
  • Set aside in sealable bottle (can be refrigerated for a week plus)

Pumpkin Puree

You can buy a tin of pumpkin puree but make sure its pure pumpkin and not a pumpkin pie mix. If you'd like to make it from scratch, I like using butternut or kent.

  • Preheat your oven to 200°C
  • Line a tray with baking paper
  • Cut 1 small baking pumpkin in half, scoop out the seeds and most of the stringy bits
  • Place cut side down onto the baking paper
  • Bake until the pumpkin is easily pierced with a knife in several places and the flesh pulls away from the skin (45-60 mins)
  • Cool, then scoop the soft flesh into a food processor 
  • Process until very smooth (3-5 mins)

Whipped Cream 

  • Chill some heavy cream overnight in the fridge 
  • Mix in 2 tbsp of maple syrup and a dash of vanilla
  • Whip the cream mix until its light and fluffy with a stick mixer 

Assemble!

  • Add 30ml of pumpkin syrup mix to a glass 
  • Add a double shot of espresso and stir 
  • Stretch your favourite milk and pour up to a cm from the top 
  • Top with a heaping of whipped cream 
  • Dust with your PSL spice mix
  • Sip, enjoy, repeat
