I’m Dreaming of a Liquid Christmas

It’s the festive season once again so it’s time to dive head first into those familiar seasonal flavours of spice, nog and shrimp on a barbie.
The gingerbread cookie makes a staple appearance around this time and is certainly on my top 10 list of those ‘why don’t we eat we eat this every month of the year?’ foods.

One of my not so secret indulgences to enjoy on any café breakfast menu is a warmed sticky dark gingerbread. I don’t care what time it is, it’s gingerbread time in my book. Bonus points for a brûléed banana on the side. With that in mind here is a very simple to prepare recipe to create a Gingerbread Latte syrup so you can get that spicy dark molasses fix all year round or impress your friends when they drop in for festivus.

What I love about this syrup is its compatibility with just about everything. In its more traditional form its paired with Dairy Classic™, but is just as suited to all alternative dairy options available including Almond, Soy and Oat milks.

Here is what you will need to make about 250ml of scrummy syrup. Like most syrups a 1:1 ratio of water:ingredients produces a solid result.

Gingerbread Latte Syrup

Makes 250ml. Time 10mins.


  • 1 cup of water
  • 1/3 cup of brown sugar
  • 1/2 cup granulated raw sugar
  • 3 tablespoons treacle (molasses is also a great option)
  • 1/2 teaspoon cinnamon
  • 1 + 1/4 teaspoon ground ginger


  1. Add all the ingredients into a saucepan and bring up to heat.
  2. Gently simmer for seven to eight minutes.
  3. Take off heat, allow to cool.
  4. Pour into a serving bottle ready to go or keep in a sealed container in the fridge ready for use.

How to use:

  • Simply add 15g of ginger bread syrup to a 200ml pitcher of your preferred milk and steam to your desired temperature.
  • A spicy gingerbread latte is meant to be an indulgent treat but you can reduce this ratio by plus or minus 5g depending on your preference.
  • You can then add this to a freshly poured shot of your favourite espresso and voila! Christmas in a cup.
  • For those of you who prefer to avoid milks (from nuts or animals) a half serve of syrup mixed in a tall glass of cold brew or nitro cold brew gives you that refreshing burst of Noël to keep singing long into the holidays.
